Cherry Pie


We have a cherry tree in our yard and it was overflowing with cherries. My mom made me go and pick as many as I could. Later that day she remembered that we had company coming over so she needed me to bake a dessert. So since I had all these cherries I decided to make a cherry pie! Cherry pie is probably my favorite pie ever! It was really delicious and everyone seemed to enjoy it. I got the recipe from Food Network online so shout out to them for having a really good cherry pie recipe. This recipe was really simple though it did take a long time to make.


As you can see I picked a lot of cherries off our tree. For this recipe you can get frozen cherry from the store if you don't have a cherry tree. These are just small tart cherries I don't think that size matters as much.

Since I picked these cherries that means I have to pit them. A few years ago we didn't have a "pitter" so we had to cut the pits from the cherries and it took a really long time. I would recommend if you have a cherry tree to get a pitter from the store it will save you a ton of time. This one is from Williams and Sonoma and it works great!

Here is a picture of me pitting the cherries. It works really well and saves a lot of clean up down the road.

I would recommend playing a movie and listening to something while you pit because it takes a really long time. Here I am watching Lilo and Stitch! :)

Here is 4 cups of pitted cherries which the recipe calls for. But my mom wanted a fuller pie so I had to go and pick another cup of cherries. So you can do this if you want you just have to add a little more sugar and corn starch down the road.

After you have all your pitted cherries you need to put them in a pan on the stove. Turn your stove on to medium heat and put a lid on it. You want to cook the cherrys down so that a lot of the water is gone. Around 15 minutes. KEEP AN EYE ON IT! I didn't because I was to wrapped up in my movie and it boiled over. It didn't seem to be much of a problem though.

After you cook down the cherries it should looks something like this. The cherries are going to look a little wilted and you will see that you don't have as much filling as you thought you would thus the extra cup of cherries comes in handy.

Next you need to measure out the sugar and corn starch. Like I said if you add the extra cup of cherries you need to add a little extra sugar and corn starch.

Make sure you mix the corn starch and sugar together really well, you don't want it to be clumpy in your filling.

Next pour the corn starch and sugar into the cherries.

Make sure you completely stir it all into your cherries.

Now that the cherries, corn starch, and sugar are mixed together it's time to boil this down. It was around another 15 minutes.

If it looks like this, pretty dark and thick then its probably done. The recipe says later if its to thin you can add some corn starch and if its too thick you can add some water.


Now you have to wait for the filling to cool. Because I wanted it to cool quicker I transferred it into a different bowl and then put it into the fridge. This is optional but it speeds up the process.

While the filling is cooling you need to figure out what you are doing for the crust and you also need to SET YOUR OVEN TO 375!!. You can make a crust from any recipe online or you can buy one. The crust on the left is what I will be using for the bottom. It is a whole wheat pre-made crust. And the dough on the right is a pillsburg pre-made crust that I will lay on the top. Buying it already made will speed up and time and save you a lot of hassle.

Once you have your crust into your pan poor in the pie filling. 

The recipe tells you to add a little butter on top of the filling. I'm not sure why but I did it anyway.

Next drape the top crust over the whole pie. Cut off any excess dough hanging over the side.

Now pinch both crusts together to form a little ridge.

Now you need to cut some slits into the middle so that any steam that needs to escape during the cooking can.

Now sprinkle some sugar on the top of the pie for a little extra piazzas.

You probably want to place your pie on a pan. This will help you if your pie spills over it will make everything not as messy.

Next carefully place your pie in the oven. Set your timer for 50 minutes and wait for it to be done! You might want to check it at around 45 minutes just in case.


Well it's all done! As you can see my pie did spill a little bit so it was nice that the pan was there to catch it. Also I think that extra cup of cherries did make the pie fuller!

Next cut your pie and enjoy!




Ingredients
  • 4 cups fresh or frozen tart cherries
  • 1 to 1 1/2 cups granulated sugar
  • 4 tablespoons cornstarch
  • 1/8 tablespoon almond extract (optional)
  • Your favorite pie crust or pie dough recipe for 2 crust pie
  • 1 1/2 tablespoons butter, to dot
  • 1 tablespoon granulated sugar, to sprinkle
Directions
Place cherries in medium saucepan and place over heat. Cover. After the cherries lose considerable juice, which may take a few minutes, remove from heat. In a small bowl, mix the sugar and cornstarch together. Pour this mixture into the hot cherries and mix well. Add the almond extract, if desired, and mix. Return the mixture to the stove and cook over low heat until thickened, stirring frequently. Remove from the heat and let cool. If the filling is too thick, add a little water, too thin, add a little more cornstarch.

Preheat the oven to 375 degrees F.

Use your favorite pie dough recipe. Prepare your crust. Divide in half. Roll out each piece large enough to fit into an 8 to 9-inch pan. Pour cooled cherry mixture into the crust. Dot with butter. Moisten edge of bottom crust. Place top crust on and flute the edge of the pie. Make a slit in the middle of the crust for steam to escape. Sprinkle with sugar.

Bake for about 50 minutes.

 Remove from the oven and place on a rack to cool.

Pumpkin Spice Cookies

Last year I made these cookies around 5 times. The cookie recipe is from one of Bethany Mota's videos. Of course she made them look divine. I didn't know how right she was till I made them. In her video for the icing she shows you how to make a caramel icing. But, because I never have cream in my house and because it takes I lot of butter I deiced to make my own icing. I just came up with this cream cheese icing. I never measured out anything when I made it so I don't really know how much of everything to put in. But, hopefully my guessing is accurate and it all comes out nicely. I would encourage you to make these because I can guaranty you will love them! The recipe is below and I hope you enjoy these when you make them!

Eating Healthy At School

If you are like me and eat your school lunches then we can probably agree that they are not very healthy, some might not even be that good. Now I am blessed at my school to have a very wide selection and really amazing meals (that by the way are not healthy at all) Today I am simply going to tell you how I try to eat a healthier lunch and the choices you can make to eat a healthier diet at school. I will be using my regular school lunches as an example so hopefully some of them will apply to your lunches as well. Also at my school we have a snack table where you can get chips, candy, pop, protein bar, almonds and also sandwiches!. To keep my meal simple and not over eat I normally don't get any other snacks or anything with my regular meal.

Here is an example of what my lunch schedule might look like 1 week and how I cut down on access fatty things.

MONDAY- sloppy Joe sandwich, baked potatoes with toppings.

Baked potatoes are VERY unhealthy so unless you LOVE them its best to skip them every once and a while. For the sandwich I always ask for no bread because that is just access carbohydrates that we don't need and it tastes the same. Also the sloppy Joe comes with sauce you can put on it so i would just leave it off because no one knows what fat is stored in that sauce.

TUESDAY- Taco Tuesday!
 
 This is my favorite meal of the week so i don't skimp out on anything! but, if unlike, me you feel like the taco would be ok with not all the extra toppings, then this is what i would suggest skipping: sour cream, the tortilla and the nacho cheese.

WEDNESDAY-Chicken Tenders and Macaroni.
 
The chicken tenders are fried so I don't eat those and though we all know macaroni is probably not the healthiest but I love it so much so I always get that. Because that is not enough food I will  also get a side like almonds or a fruit cup or something. (so basically if you like something a lot the get it even if its not healthy! Its just one day and its good to give in sometimes.)

THURSDAY-Chicken and rice (or something you don't really like)
 
I take a lunch like left overs or a soup cup or something healthy. If I deice to eat the snack stuff at school i will stay away from the sandwiches because they are all white bread and half the sandwich is just bread = carbohydrates we don't need = fat! I normally get a protein bar, almonds and a fruit cup and that holds me over till after school.

FRIDAY- Pizza!
 
 The only thing I have to say is if you dab the top of you pizza with a napkin and get rid of all that access oil it cuts down a  ton of fat off you pizza. I don't have really any tips on how to make pizza day healthy because I mean its pizza! If you don't let yourself have pizza then you aren't liven girl!

So the tips I have are...
1.If you aren't hungry don't eat it.
2.Don't let people make fun of you that you are eating a lot of food because you might be an athlete and need a lot of fuel.
3.If you don't need the bread...don't eat it.
4.Don't have a candy bar everyday...it will add up just have one once and week and that's it. (i have mine on Fridays!)
5.Make sure you bring a snack for after school especially if you play sports!
6.Try not to drink your calories (pop, Starbucks drinks, sugary drinks)
7.Don't be totally obsessed with your weight just be aware of what you are putting in your mouth.
8.If you really love it then eat it. But make sure that is only once a week or so.

I know that was a lot to take in. But what can I say, I want to be a nutritionist when I grow up so I'm starting young.  I am in no way shape or form wanting you guys to be really obsessed with your weight. But, I am just trying to share with you some of my tips I have either learned or, heard from my mom (a really healthy women.)

As most of you read in my "Healthy Eating" post pop is not very good for you and you should try to stay off of it. Well, I am well aware that none of us can go through the summer only drinking water. Today I have some delicious fruity drinks that are way healthier than pop and sometimes better. Also I have a recipe for sun tea.
The first drink is... fuze strawberry and melon drink.
This one is the low calorie and slenderize one. It is a really great fruity drink for the summer time and I know fuze has a lot of different kinds of drinks.

The second drink is... the san pellegrino blood orange drink.
Now if you just can't go without your bubbly drinks then this one is the way to go. It is fizzy but doesn't have all that corn syrup and nasty stuff that pop has in it.

The third drink is... The santa cruz organic strawberry lemonade.
Because it is organic  it is much healthier than minute maid lemonade.

And the fourth drink is... Sun tea

What you will need:
A herbal tea, or fruit tea. I am using the red zinger tea.
a gallon jug
and sunshine!

First you want to fill the jug with water and put in around 1 tea bag for every cup of water.


Next set your tea in direct sunlight for about 2 hours or until your tea is red.

If your tea looks something like this then it should be done.

Next you will want to add sweetener. I just sweeten it one glass at a time but you can sweeten the whole jug.
If you are using honey you will need to put some in a little bowl and microwave it for a few seconds so it will be thin enough to dissolve


Add some ice and there you go!!

Eating Healthy


Eating Healthy is not very easy for most teenage girls. We get bombarded with junk food at school, party's  and friends houses. Today I am just going to share some of my tips.
Now, don't get me wrong this post is as much for me as it is for you. My struggle with eating is bored eating. Ever heard of it? Of course you have everyone does it! Its when you are bored so you open your fridge and get something out and eat it even if you aren't hungry. Now i'm not saying that you all need to go on a diet that is not healthy at this age. All i am saying is that you need to think more about things you eat and when you eat them! In this post i will have some recipes for healthy meals.

Tip #1 DRINK WATER! I know I hate drinking water too but it will help your skin, your mood and your health. So, drink lots of water. I even have my water in this cup and fill it up whenever it is empty


Tip #2 Try not to drink pop. I know i'ts sooooo good and you only have it once a week. Well, it will still slowly weaken you bones and teeth and it has sooooo much sugar in it.

Tip #3 Try not to snack. It is very unhealthy and will ruin your appetite. That is the way people gang wait.

Tip  #4 Don't bored eat. This is when you are bored so you just eat... bad idea!

Recipes
 Breakfast


  • Breakfast Taco

Cook 1 egg. Heat a corn tortilla. put the egg in the tortilla and add some salsa. i really don't like eggs and i love this breakfast. it will get you going with the protein from the egg and the salsa and tortilla add some much flavor.

  • Gourmet Yogurt.
Put some Greek yogurt in a bowl. Then add some granola and fresh fruit. This is a delicious fresh breakfast. I love it in the summer time. It gets me awake and feeling ready for the day. The yogurt( if it's Greek) will give you enough protein to last till lunch.




Snack
  • Apples And Peanut Butter Almond Butter.
Cut up an apple and put a spoon full of almond butter on your plate and there you go! Almond butter is much better for you then peanut butter. Also i think it tastes better. The fresh apples with the thick butter is really good!





 LUNCH
  • "Pizza"
This is no ordinary pizza. All you need is a piece of bread, a tomato, spinach, cheese and butter. heat the oven and spread some butter on your bread. Put the bread in the oven and melt the butter. Then add all the other ingredients. Top it off with some olive oil and salt and cook it for 15 minutes or until the cheese melts. This pizza is more fresh then pizza you would get at pizza hut and it is much heather!








Let me know if you try any of these things. Don't give up on your swimming suit body it will come! Also you can check out my workout routine. That i try to do every day. Also what helps me is set a goal for that day if its no sugar or no snacking or drinking tons of water then i try to do it for that day. Also i write notes to my self like this one Hope this helps!
